I recently bought a book from Kinokuniya and it is quite lovely. I do not know what it's called, as, unfortunately,
I do not understand Japanese. But in this case, who needs words? Over 300 pages of beautiful illustrations explains step by step knife instructions to chop/slice/dice/fillet almost anything you can think of, but especially fish.

And what's more is, the book comes with a DVD, in which Chef demonstrates the cuts on the cleanest cutting
board I've ever seen.
